Ingredients:
2 c. seedless watermelon chunks
1 c. cold water
1 c. ice cubes
1 tsp. lime juice
Optional ½ tsp. stevia

4 c. fresh blueberries
1 heaping tsp cornstarch
1 tsp lemon juice
Cooking spray
9” pie or plate quiche pan
1 c. All purpose OR gluten free all purpose flour
½ c. sugar alternatives such as ¼ c. dry monk fruit sweetener + ¼ c. coconut sugar,
or ½ c. Splenda
1 tsp baking powder (heaping if use gluten free flour)
¼ tsp salt
1 Tbsp extra virgin olive oil
1 Tbsp melted butter
1 Tbsp milk
1 tsp vanilla
2 egg whites
1 small + 1 med mixing bowls
1 Tbsp coconut sugar, (optional) mixed with 1 tsp cinnamon for topping.
Instructions:
Preheat the oven to 350 F.
Mix blueberries, cornstarch and lemon juice in a medium size mixing bowl.
Spray your pie or quiche plate with cooking spray.
Pour the blueberry mixture into the greased pan.
Wash and dry the med mixing bowl and pour in the flour, sugar, baking powder, and salt. Whisk well to mix. Make a well in the center.
In small mixing bowl whisk oil, butter, vanilla and egg whites.
Add the wet mixture to the well in the dry mixture. Use a fork to combine. At the end, drizzle milk in until the mixture starts to make clumps that hold together. You may need a little more or less milk depending on humidity.
Drop by teaspoonfuls on top of the berry mixture. Spread out to cover the whole area using greased fingers.
Optional topping: Sprinkle cinnamon & coconut sugar on top
Bake for 40-45 min or until the berries have burst, it's bubbling, and topping is a golden color. Serve warmed with frozen yogurt, Greek vanilla yogurt, or a dollop of whipped cream. Served 8-12

Ingredients:
2 c. total flour consisting of : 1 c. organic whole wheat flour & 1 c. organic all purpose flour OR Gluten Free version, use 1 c. brown rice and 1 c. white rice flour.
1 tsp baking soda
1.5 tsp baking powder
1/2 tsp salt
1/4 c. monk fruit sweetener
1/4 c. coconut sugar
1/2 c. egg whites OR 2 whole lg eggs
1/4 c. coconut oil OR 1/4 c. softened butter
1/4 c. unsweetened applesauce
1 tsp real vanilla extract
1/2 c. semi-sweet chocolate chips
1/2 c. premium raisins
1/4 c. unsweetened coconut flakes
Recipe Instructions:
Using a 6 qt. crock pot, take the pot out and turn it on high heat. This is an important "pre-heating" step. I've tried doing it with and without a "pre-heat". It definitely works better if the outer part of the crock pot is hot! Grease the inner pot well with either coconut oil or butter. Set aside.
In a small mixing bowl, whisk the flour, soda, baking powder, stevia, coconut sugar, and salt well until no lumps remain and everything is well incorporated together.
Using an electric beater on low, mix the bananas until well mashed, then add in the egg whites (or whole eggs) while still mixing. Add the coconut oil, the unsweetened applesauce, and mix a few minutes on medium until everything is well mixed. Add the vanilla in last and mix again abt another minute.
With a wooden spoon, add the flour mixture into the banana wet mixture and stir well until everything is mostly mixed but not over-mixed. You want a few lumps. Then add the raisins, coconut flakes, and chocolate chips. Stir in using another 5 or 6 strokes just until everything is well blended.
Using a spatula, pour out the raw dough into your crock pot. Put the crock pot into the outer hot baking part of the pot. Put paper towels under the lid and then the lid on. Make sure the paper towels are long enough that they don't touch the dough. You want it tight. This is an important step or else your loaf will be soggy!!
Cook with temp on high for 1 hour. Then turn the temp down to low, and cook 1 more hour. It's done when an inserted toothpick in the center, comes out clean. Serve with frozen yogurt, whip cream, or a little shredded coconut on the top.
